Low Carb Buttery Biscuits Recipe





I've been having a craving for biscuits and gravy, but when living a low carb lifestyle that's a bit difficult.  This set me out on a quest for a good biscuit recipe & I'll figure out a gravy recipe next :)

These were pretty good.  They were a little gritty since they use coconut flour, but the flavor was really close to what I'm looking for.  These may just be THE biscuits that I'll be using to satisfy my craving!!

I stumbled upon this recipe on Drop the Sugar and decided to give it a whirl today.  Here is the link on the original blog:  Buttery Coconut Flour Low Carb Biscuits

INGREDIENTS:

  • ½ cup coconut flour
  • ½ tsp salt
  • ½ tsp baking powder
  • ½ cup egg whites
  • 1 egg, large
  • ⅓ cup butter, unsalted
  • 3 tbsp water
DIRECTIONS:
  • Preheat oven to 350 degrees F, and grease a biscuit bread pan with butter. (Using oil or butter vs spray helps the bread not to stick to the pan.)
  • In a large bowl, mix together the dry ingredients of coconut flour, salt, and baking powder.
  • In another bowl, mix together the wet ingredients. When well mixed, add the wet ingredients into the dry ingredients and whisk well. (If using a blender, a low-medium blend is good.)
  • Fill 6 spots the biscuit bread pan with ¼ cup each of the the biscuit mixture. You'll have to actually shape the biscuits in the pan with a knife or your fingers to shape.
  • Bake for 20 minutes or until golden on the top.

MY EXTRA THOUGHTS:

For step #4, the recipe states that your need to shape the biscuits yourself.  I just used a 1/4 cup measuring cup and then patted it flatter:


I skipped adding the salt because I used salted butter.  

I think this recipe is pretty versatile.  I think this would be good with a little cheese added because it might help with the grittiness of them.  I also think keeping the recipe as is and adding in some herbs would be nice.

These cut in half easily and can be picked up to eat just like a "regular" biscuit.
